Ingredients

Adjust Servings:
600 grams Cauliflower
50 grams Onions
4 cloves Garlic
200 grams Potato
2 tablespoons Sesame Oil
2 twigs Curry Leaves
1/2 tablespoon Cumin
3 tablespoons Coriander
1/2 tablespoon Peppercorns
2 Cloves
a little Cinnamon
1 All spice curry leaf
2 Dry red chilli
1/2 tablespoon Turmeric
1 Litre Water
2 tablespoon Almond Butter

This curried cauliflower almond soup is one of our favourites at Vibrant Living. Its darn simple to make and so delicious.

Garlic and onion add the depth of flavour, spices add a bit hit heat and almond butter gives the creaminess – and the result is simple and delicious soup. So, it is a healthy recipe bound for regular meal rotation.

You can have it for dinners or breakfast with some multigrain or sour bread of your choice.

• Chop the onion and garlic into fine pieces.
• Peel and chop potatoes into small chunks.
• To make curry powder - grind cumin, cloves, peppercorns, and cinnamon into fine powder.

• Heat a pot and add 2 tablespoons of sesame oil, garlic, onion, all spice leaf, potatoes and salt. Stir them for a couple of minutes.
• Now add red chillies, turmeric powder, curry powder and cauliflower. Stir them for a minute and add water. Let it cook for 15 minutes.
• After 15 minutes, adjust the salt, add almond butter and let it cook for a minute.
• Add some chopped parsley or coriander and server it hot.

You can blend the mixture for a smooth texture or else just have as it is.
