Vegetable and lentil soups/stews are comforting dishes you can enjoy any time of the year. This wholesome food is perfect for people craving a healthy reset.

Here, I am providing a recipe for soup/stew using scarlet beans and some vegetables. You can also substitute the scarlet beans with legumes like kidney beans, horse gram, and others. It’s the same with vegetables as well. You can use any vegetables that are in season.

This recipe is actually a part of our daily meal delivery dinner menu at Vibrant Living. You can pair it with a loaf of good sour bread or multigrain roti.

• Soak the scarlet beans overnight and cook them with some water.
• Chop the vegetables into small chunks
• Finely chop garlic, chilli and onions as well.

• Heat a pot and add 2 tablespoons of oil.
• Before the oil gets too hot, add garlic, rosemary, onions, and chillies. Toss them for a minute.
• Now add carrots, chow chow, pumpkin, potatoes, and some water.
• Stir well, cover the pot and let it cook for 20 minutes on low flame.
• After 20 minutes, open the lid and check if the vegetables are cooked. If not, let them cook for some more time.
• If cooked, add scarlet beans, salt, black pepper and chopped spinach leaves.
• Mix well and let them cook for few minutes.
• Turn off the flame and serve the hot soup/stew with some bread.
