1 cup Diced or Pureed Tomatoes

Raw Jackfruit is the new vegan sensation – the stringy body and firm texture makes it a perfect alternative to meat.

It is low in calories, adequate in protein, high in potassium, rich in fiber and antioxidants. Thanks to the low glycemic index, it aids in slow digestion and prevents blood sugar spikes.

The curry made from unripe or baby jackfruit is a comforting, vegan and healthy meal packed with full flavour and a perfect dish for weekend dinners. You can pair it with multi-grain roti, brown rice, millets, and sour bread. You can also enjoy it with vegetable salad or lettuce.

Jackfruit can be prepared in several ways – every cuisine has its own recipe. In this blog, we will provide the Andhra version of preparing this delicacy.

Note: Kidney failure patients should avoid eating raw jackfruit.

The first step includes three preparation tasks.

• Parboil the raw Jackfruit pieces by adding turmeric powder, ginger-garlic paste and water.
• In a food processor, blitz the soaked almonds into a smooth paste.
• Finely chop the two onions and slit the chillies into halves.

• Take a large skillet and add sesame oil to it. Once it is hot, add diced onions and green chillies.
• Sauté until the onions become translucent.
• Now add ginger garlic paste and sauté for a minute.
• Add turmeric, cumin powder, coriander powder, and garam masala. Stir until the onions are nicely coated with the spices.
• Add the diced or pureed tomatoes and stir well. Let it cook for a couple of minutes.
• Now add the boiled jackfruit pieces, chilli powder, salt and give a nice stir to mix all the ingredients together.
• Further, add cooked chickpeas, soaked almond paste and a small amount of water. Mix them well, close the lid and let it cook for 10 minutes on low flame.
• Stir occasionally to prevent the curry from burning or sticking to the bottom of the pan.
• After 10 minutes, turn off the flame, check for seasoning (adjust the salt if needed) and serve it hot with whole grain roti, cooked brown rice or millets.

Notes

• Apply oil to hands, knife and cutting board while cutting the jackfruit.
• After chopping the raw jackfruit, place them in water with some salt to prevent discolouration.
• The curry recipe is moderately spicy. You can adjust the heat based on your spice tolerance.
