1 tablespoon Dried Green Mango
1 twig Rosemary
3 tablespoons Mustard Oil

Red bell peppers are a bright and tasty addition to salads, sandwiches, and wraps. They are packed with nutrients, antioxidants and excellent source of vitamins A, B6, C, and folate.

Apart from eating raw in salads, you can make an excellent marinade that literally goes with everything. For instance, you can use it as sauce, dip, chutney for dosa, pizza sauce, pasta sauce, marination for vegetables/fish and the list just goes on.

Today, I am going to share you a very simple and easy to make this red bell pepper marinade.

Steps

• Wash and wipe the bell peppers.
• Turn on the flame and roast them on open flame. Using tongs, you can turn them every few minutes to cook them on all sides.
• You have to cook them until the peppers are charred and soft.
• Once cooked, take them off the flame and place them on kitchen towel.
• Wrap the kitchen towel and keep them aside for 2 minutes. This makes them sweat and the skin comes off easily.
• After 2 minutes, you can peel off the skin using the towel. Make sure to remove all the charred bits as they are good for health.

• Chop the roasted red bell pepper and make sure to remove the seeds.
• Into a mixy jar, add copped bell pepper, dried red chillies, peeled garlic cloves, rosemary, salt, black pepper and dried mango powder.
• Blend the ingredients into a smooth paste and the marinade is ready.

Notes

• Instead of raw mango powder, you can add apple cider vinegar or lemon juice.
• Instead of cooking on open flame, you can roast the red bell pepper over a grill or oven.
• Don’t add charred skin into the marinade. Make sure to remove all the charred bits.
• Don’t add seeds as they are hard to digest.
