1 tablespoon Cumin
2 tablespoons Coriander
1/2 cup roasted Peanuts
1/2 cup roasted Almonds
1/4 cup Sesame Seeds
5 cloves Raw Garlic
1/2 tablespoon Chilli Powder
1/2 tablespoon Turmeric
as per taste Salt
2 tablespoons Oil
5 Red Chillies
1 medium-sized Onions

This recipe is a combination of taste and health, just as our motto, deliciously healthy. Bitter gourd or karela is a vegetable that many people do not like for obvious reason – bitter taste. However, when cooked right, you can enjoy it happily.

When it comes to the benefits of karela, it is nothing less than a super vegetable. It is a powerhouse of several important nutrients, antioxidants, and flavonoids. Diabetic people are often asked to include this vegetable in their regular diet because it helps reduce the blood sugar levels.

Here, I will share you stuffed karela recipe that my mom makes regularly. You can pair it with multigrain roti or brown rice.

Steps

• Heat a hot pan, add 1 tablespoon of cumin and 2 tablespoons of coriander seeds. Toss them until they release nice aroma.
• Now add sesame seeds and continue to roast until they nutty aroma is released.
• Add roasted peanut and almonds, red chillies, some curry leaves and raw garlic. Toss for few minutes and turn off the flame.
• Let the roasted ingredients cold down properly.
• Once cooled, grind them into fine powder.

• Heat a pan or a skillet and add 2 tablespoons of oil.
• Once oil is hot, add finely chopped onions and cook them until tender.
• Add the grounded powder, turmeric, salt and chilli powder and stir for a minute.
• Turn off the heat and test for taste.

• Take the bitter gourds and make a deep vertical cut in the centre.
• Fill the masala mixture into the bitter gourds and set aside.
• For cooking the bitter gourds, you can either grill them on a barbeque or shallow fry them on a pan as per your preference.
